Kale Walnut Pesto & Blistered Tomato Pasta

Kale Walnut Pesto:

6-8 kale leaves (removed stems)

10 basil leaves

¼ cup walnuts

¼ cup grated parmesan cheese

3 pieces of garlic

1 tsp. salt

1 tsp. pepper

½ cup olive oil


1-pint grape tomatoes

1 tbsp. olive oil

½ tsp. salt

½ tsp. pepper

Pasta (you can use spaghetti, or any different type of pasta will do)

Parmesan cheese for garnishing


For Kale Walnut Pesto:

  1. In a food processor, mix all the pesto materials excepting the olive oil. Throb 5-7 times till all the ingredients are chopped. Then, drizzle in the olive oil till it combined.
  2. Set it apart.

For Pasta:

  1. Preheat oven to 425 degrees. Stir the tomatoes with olive oil, salt, and pepper. Roast it for 15 minutes, until the tomatoes begin to swell. Take out from oven and set it aside.
  2. Boil Pasta in water. Keep 1 cup of this water aside. Drain the pasta. Top with a preferred amount of pesto and then combine it. Mix in some of the pasta water to thin the sauce. Add scalded tomatoes and any tomato liquid into the pan, toss to mix. Serve hot, garnish with parmesan cheese and basil leaves.
